I. OBJECTIVE

1. To provide guidelines in the inventory and maintenance of equipment and utensils used in the training

 
II. DEFINITION OF TERMS

III. GENERAL POLICIES

Guidelines in Equipment and Utensils Inventory:
1. All training equipment and utensils are declared in Accountability Form in the Human Resources Department (HRD).
2. Every three (3) months, all equipment and utensils are accounted by Training Assistant (TA) and Technical Trainer based in Accountability Form from HRD.
3. The result of counting is submitted by TA to Training Officer (TO).
4. In case that there are discrepancies such as lost and damage, TA must submit an Incident Report to TO who will investigate the issue and propose whether to give sanction or not.
5. TO will report the issue to COO who will conclude the issue.
6. TO will file Purchase Requisitions if there are items that need to be replaced. Requisitions must be approved by the COO/CEO before submission to Purchasing.

 

Guidelines in Utensils Maintenance:
1. Every time there are time and motion and hands-on of products, Trainer must ask the trainees to wash and clean the utensils before and after using. Training cart is also cleaned before and after using.
2. In case that a trainee damages an equipment or utensil, he/she must write an incident report and submit it to Training Assistant (TA). TA will forward it to Training Officer (TO) for proper investigation and sanction. TO will relay the information to the HRD.

 

Guidelines in Equipment Maintenance:
A. Sealer
1. Always check and clean the upper mold of sealer to remove the burnt film.
2. Always clean the lower mold with hot water and towel to remove excess syrup.
3. Always maintain its desired temperature of 150-180˚C.
4. Clean the sensor with cotton buds and alcohol weekly.
5. Do not forget to turn off the sealer during closing.

B. Rice Cooker
1. Always unplug the rice cooker when not in use.
2. Wash the rice cooker pot right after cooking pearl. Use sponge and liquid soap. Rinse thoroughly and let it dry.
3. For the rice cooker body, wipe it with towel. Do not soak it with water.
4. Wipe the rice cooker cord with dry towel. Avoid the wire from getting wet.
5. Before inserting the pot inside the rice cooker’s body, make sure to wipe the outside part of pot with dry towel.

C. Boiler
1. Unplug the boiler before cleaning.
2. Do not wash the body with water and soap; just wipe it with dry towel.
3. Wipe the cord with dry towel.
4. Make sure it is turned off before pouring water. Once it reaches the maximum level in water indicator, cover and turn on the boiler.
5. Rinse the insides of boiler with water.
6. Always check the faucet for leaks.

D. Glass Steamer
1. Turn off the steamer during closing.
2. Open the faucet to drain the water.
3. Remove all racks.
4. Wash the insides of the steamer with soap and water.
5. Use sponge to fully clean the steamer and make sure there are no traces of soap.
6. Wipe the upper part of steamer with dry towel.
7. Make sure the sensor is not removed and is still intact.

E. Fryer
1. Place carton at the bottom of fryer.
2. Use scotch brite to clean the outside part of the fryer’s stainless canister.
3. Maintain the fryer at 100˚C temperature.
4. Drain and strain the used cooking oil every opening.
5. Use siomai stick to check the temperature of oil inside the fryer.
6. Wash the cover and stainless canister with soap and water.
7. Wipe the body and cord with dry towel.

F. Griddle
1. Wash the griddle pan with soap and water.
2. After washing, wipe it with dry towel. Grease it with cooking oil during closing.
3. Wipe the body with dry towel.

G. Gas Stove
1. Check the hose for leaks by wiping it with wet soapy towel.
2. Check the regulator if it is properly locked inside the LPG tank.
3. Wash the grate and drip pan with soap and water.
4. Wipe the body of gas stove with dry towel.
5. Prick the holes of the burner head with toothpick.
6. Check if the igniter is still balanced with the burner tube.
7. Use long lighter if it does not ignite.

H. Chest Freezer
1. Unplug the freezer every time you defrost.
2. Remove all products before defrosting.
3. Do not use scissors, knife or any ammonia-based and harsh abrasive products in cleaning the freezer.
4. Clean it with soap and water, and then rinse it with water. Wipe with dry towel.
5. Check for broken corner strips. Call maintenance to replace broken ones using glass silicon adhesive.
6. Wipe the door with wet towel then dry towel.
7. Clean the inside of the compressor.
8. Check the fan blade for alignment. A bad fan blade will produce vibrations and noise. It will destroy the fan motor shaft bearings if it is not replaced with a good one.
9. Check the thermostat.
10. Do not leave the door open for a long time. This will give the compressor extra work to do. Energy conservation must be observed.
